Are these noodles made from rice only?

Exactly! We have brown noodles that’s made from unpolished rice and white noodles are made from white rice. All are from rice only!

Are these noodles made with any of the gums?

No, there is not any gums in the ingredients, it is made of 100% Organic rice only

Are these noodles packaged as one big mass, and if so, how easy is it to separate the mass into a smaller amount for one or two servings?

you can separate it, cause there are 2 layers inside that vermicelli package and very easy to separate them

I want to use these in an Asian chicken salad, no instructions, should I brown them lightly first?

soak in warm water about 5 minutes, boil a little water or chicken broth in a nonstick pan and place noodles in. Boil for about 4-5 minutes. Pull out a strand and taste to make sure in is soft. Drain and cool. Ready to use in salad. Expands so a little goes a long way.
