Black pepper is bland in comparison. Review: Perfect for wild game and smoke - I've always added good ground and cracked black pepper with a concoction of other spices including caraway, juniper berry, clove and cardamom to wild duck, bear, goose and venison. This replaces all but the caraway. Has a bit of a citrus, clove, cardamom undertone. I'm still experimenting with it, but it goes extremely well with grilled and smokey wild game, as well as pressure cooked wild fowl with onion and celery. A very complex flavor. I still do add some cracked T. Pepper corns to spike up the pepper heat, but I like it hot, so your results may vary.
