Why does it crystallise and not disolve when you add to water?

Thank you for your email. Water can added to Glucose Syrup without any crystalisation. It would only crystalise if not heated correctly too fast or too high heat. The same as heating sugar. You need to gradually heat Glucose Syrup in 1 pan on a low heat to warm temperature. Then in a 2nd pan gradually heat water to same temperature also on low heat. Then Slowly add the water to the Glucose Syrup whilst constantly stirring. Another easier option is to use Glucose Powder and make into a syrup using water of your ideal thickness.

Will these dissolve in cold water?

I dont know it mixes well with protein mix .so must as that's made with powder and water
